The results of several years of study of the best practices of cider and armagnac, calvados. Chapters include the history of cider and "poire" in the Middle East, the Romans, Greece, Africa, Spain & of course France;Methods of preparation around the world include the USA, Jersey, Germany; and scientific examination of fruit maturity, fermentation techniques, the varieties of fruit, conservation & orchards.
