Volume III ("Studies on Vinegar and Wine"), concerning the world renowned microbiologist Louis Pasteur's research on wine fermentation and spoilage, "Les maladies des vins". In 1863, Pasteur was commissioned by Napoleon III to find a solution to the spoilage of French wine which was causing enormous financial difficulty for French wine producers; Pasteur proved that bacteria were causing the wine to spoil, research which led eventually to the development of the process of pasteurization. This terrified the wine makers, but it was effective, and eventually led to Pasteur's development of the germ theory of disease.
